SUPPLI: A typical Roman Street Food Specialty
Supplì are a wonderful specialty of Roman cuisine: delicious rice croquettes, with a typical oblong shape. Excellent as an appetizer or at aperitif time but even so, on their own or as a treat, any time is a good time to enjoy these croquettes also called supplì al telephone due to their stringy mozzarella heart. It is a rather ancient specialty: Roman supplì are true ancestors of street food.
They are prepared by cooking the rice in a meat sauce, seasoned with pecorino, and then forming meatballs inside which to "hide" a piece of mozzarella. Classic breading in egg and breadcrumbs and then off in boiling oil. Irresistible. The original recipe calls for a ragù made with chicken giblets, livers and livers, today almost always replaced by a mix of pork and beef that is closer to contemporary tastes.
